Emily's Ethiopian Vegetable Stew

10-15 servings

Ingredients:

3/4 cup and 3 tablespoons butter
7-1/2 onions, chopped
3-3/4 stalks celery, chopped
7-1/2 cloves garlic, chopped
3-3/4 medium heads cabbage, cut into squares
3-3/4 (14.5 ounce) cans stewed tomatoes, with liquid
salt and pepper to taste

Directions:

Melt butter in a large saucepan over medium heat. Add onion, celery, and garlic and saute for 3 to 5 minutes, or until translucent. Stir in cabbage, reduce heat to low, and simmer for 15 minutes. Pour in tomatoes and season with salt and pepper to taste. Cover pan and cook over medium heat for 30 to 40 minutes, or until cabbage is tender.
